This is a participant-only class — one ticket, one smoker. You’ll be hands-on from Friday night through Saturday afternoon, working alongside Peter Zukiwski and the Pitt County BBQ team every step of the way.

Your dinner guest joins on Saturday evening to share the meal you’ve prepared — brisket you trimmed, seasoned, smoked overnight, rested, and carved yourself.

You leave with the skills, the techniques, and extra brisket to take home. Your guest leaves impressed.

  • 7:00 – 8:00 PM — Hands-on brisket trimming and seasoning
  • 8:00 – 9:00 PM — Fire management, smoker setup, wood selection & temperature control
  • 9:00 – 9:30 PM — Pit preparation and Q&A
  • 9:30 – 10:00 PM — Briskets on the smokers
  • Optional pit-side social time after the formal session
